Pizza is one of those foods that everyone seems to be an expert on -- everyone knows exactly what they like. At Supino Pizzeria located in the Eastern Market, the owner, Dave Mancini is the expert, making his signature hybrid pizza that uses traditional Italian influences and more cutting edge New York style.

While visiting his father’s home town in Supino, Italy, Mancini realized his calling for pizza. Everyone had wood-burning stoves in their back yards and the pizza was the best he had ever had.

So, he took the name of his father’s town and has spent six years perfecting the crust for his pizzeria; a thin and crisp New York style as he calls it, but with enough chewyness.

Red pies (with sauce) and white pies (without sauce) are the two basic choices for the unique combinations at Supino like the “Smoky”, speck (smoked prosciutto), roasted garlic, mozzarella, smoked gouda and ricotta. Supino recommends ordering the sauce on top of the pie.

Being in Eastern Market, Mancini wanted to appeal to the market crowd that loves a variety of fresh ingredients, and only the best are used. Any of the pizza’s veggies are roasted in house such as eggplant, garlic, onions, peppers, artichoke and spinach. Supino also makes some killer vegetarian pies.

Pies come in either 10” or 16” and select pizzas are sold as slices. Besides pizza, Supino has a house salad and the house pasta, manicotti in crepe-style pasta with Bolognese sauce, an amazing dish.

You’d think the place had been open for 20 years. The décor is warm and rustic with old wood doors used as paneling and antique wood design tables -- which came with graffiti -- used as tables.
