Since opening five years ago, Fiddleheads has built a substantial customer base who all share the common interest to be challenged by food and learn something new every time they eat. Executive Chef Tim Voss is incredibly knowledgeable about his cuisine.
He rattles off Latin names of organic vegetables, intimately understands wine, makes advanced culinary preparations look easy and has an understanding of how all of these components fit to make a truly unique dining experience.
Everything is local and seasonal. Fiddleheads takes vegetabls seriously, understanding how to show them off. This is also why Fiddleheads is a great place for vegans and vegetarians -- there’s always at least a few choices. Chef Voss buys from local farmers and completely changes the menu about five times per year to ensure that the food is as fresh and in season as possible.
Not your ordinary uninteresting beverage list, Fiddleheads carries beer like Dogfishead and a nice assortment of half bottles of wine going from obscure French to blockbuster California. The cool part is that this stuff is there because the staff likes it and can actually explain it.
