Feta and Beet Salad

Lutes' upscale version of the Coney Island salad begins with a base salad of micro parsley and micro mache adorned with marinated feta and cucumbers, fresh roasted beets and toasted pine nuts. The dressing is made using similar components, beet juice reduction and feta and pine nut dressing.
